Quick and easy kimchi fried rice using my delicious kimchi with a crispy fried eggy of course.

Quick and easy kimchi fried rice using my delicious kimchi with a crispy fried eggy of course.

Ingredient  for two people:

120g rice

1 jar kimchi, juice squeezed out

1/2 red onion, finely chopped

1 garlic clove, crushed

1 tbsp grated garlic

75g edamame beans

2 tbsp soy sauce

1 tbsp sesame oil

2 eggs

Spring onions, finely chopped

Sesame seeds

Method 

1. Cook your rice according to instructions in salted water

2. Whilst the rice cooks whisk together the kimchi juice, soy sauce, and sesame oil.

3. Heat a glug of veg oil in a large pan and add the garlic, onion and ginger, and cook gently for 5 mins. Stir in the kimchi and edamame beans then cook for another 4 mins.

4. Add in your rice and turn up the heat so it starts to crackle, then add the kimchi juice mix. Cook for about 4 mins more then dish up into a bowl.

5. Serve immediately with fried eggs, spring onions and sesame seeds.
