korean noodles with vegetables recipe for 2 person:
Ingredients:
✅125 g chow mein pasta✅2 tablespoons oil
✅1 / 2 onions
✅1 / 2 leek
✅1 small carrot
✅1 teaspoon garlic (grated or dried)
✅ 1 pepper (or half yellow and red)
✅1 / 2 zucchini
✅1 / 2 eggplant
✅3 tablespoons sweet chilli sauce
✅2 tablespoons soy sauce
✅2 tablespoons ketchup
✅1 tablespoon sesame oil
✅5 tablespoons water
Method
Boil the pasta according to the instructions on the package (about 4.5 minutes). Drain and pour cool water in a colander.
Cut all vegetables into strips or bars.
In a wok or a large, wide frying pan, stew the onion in oil, then add the leek and carrots. Fry, stirring with a spatula, until the vegetables are tender.
Add the garlic and after a while the rest of the vegetables: peppers, zucchini and eggplant. Fry, stirring every now and then with a spatula, until the vegetables are glassy and start to soften (approx. 7 - 9 minutes).
Add the noodles and mix, fry for a while together.
Move the vegetables aside and make room at the bottom of the pan. Pour the sauce into them (all the ingredients mixed) and bring to a boil. Mix with the ingredients and cook for about 2-3 minutes, stirring every now and then with a spatula.
Serve with roasted sesame and chives.
