GERMAN PANCAKES Serves 4
This delicious dish can be in the oven in 5 and on the table in 20. Sweet, satisfying and moist (YUP! I said it.) and packed with protein!
I’ve said it before and I’ll say again... you absolutely can eat delicious, satisfying meals and still reach your fitness goals. With a little tweaking and better ingredients, you can do this.
INGREDIENTS:
2 tbsp coconut oil
2 large eggs
8 egg whites or 264g if using liquid egg whites
1.5 c unsweetened vanilla almond milk
1.5 c Cake Mix
1/2 tsp sea salt
1 tsp vanilla extract
1/2 c plain greek yogurt FF
Vanilla sweetner drops (stevia)
Chopped fruit of choice ( strawberries, peaches, etc)
Sugar Free Maple Syrup
DIRECTIONS:
•Preheat oven to 425 degrees. Add coconut oil to a 9x13 glass baking dish. Place in oven. Allow to melt.
•Place eggs, egg whites, milk, Kodiak Cakes, salt and vanilla in a blender and blend on high for 5 minutes. Yes, 5! •Remove baking dish from oven, spray sides with cooking spray and pour mixture into the hot coconut oil. Bake for 20 minutes.
• Cut pancake into 4 equal portions. Sweeten the yogurt with stevia and spoon 2 Tbs. onto each portion along with 1⁄2 cup fresh fruit and drizzle with syrup.
