Laksa paste

1 small-medium shallot
5-6 roasted cashews
2 cloves of garlic
1 tablespoon ginger
1 stick of lemongrass (white parts - outer shell removed)
3-4 dried red chillis
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon ground coriander

Soup

400ml coconut milk
500ml vegetable stock
1-2 teaspoons white miso paste
2-3 tablespoons soy sauce
1 teaspoon salt (optional/adjust according to taste)
2 teaspoons brown sugar
Juice of one small lime

Toppings
Steamed veggies such as pak choi and broccoli
Noodles
Crispy tofu
Fresh red chillis

Steps

1. Place the dried chillis in hot water, cover, and soak for 15-20 mins
2. Add the shallot, garlic, ginger, cashews, lemongrass, and soaked chillis to a food processor and blend into a fine paste
3. Heat oil in a pan and add the turmeric, cumin powder and coriander powder. Once sizzling add the paste and fry on low heat for 10-15 minutes, stirring continuously
4. Add the coconut milk, vegetable stock, soy sauce, salt, miso paste and bring to boil.
5. Add the sugar and lime juice, cover, and let simmer for 5 mins or until the soup has thickened to desired consistency
6. Serve with noodles, veggies and tofu
