Healthy Banana and Maple muffins Recipe

How often do you throw an overripe banana away? Next time why not try making some Healthy Banana and Maple muffins.


⅓ cup melted coconut oil

½ cup maple syrup or honey
2 eggs
3 ripe banana (mashed)
¼ cup milk of choice or water
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon cinnamon
1 ¾ cups plain flour
1 teaspoon golden caster sugar to sprinkle on the top before baking.

Bake for 20 mins 160 degrees.
